Allergies, Food Intolerance, and their Effects on Our Health

When most of us think about allergies, we generally think about sinus problems such as a stuffed or runny nose and itchy eyes. These symptoms may be caused by an allergy to a food, a pet, a pollen or many other natural or man made substances. Sometimes we think of the itch caused by rubbing up against a pet’s fur that we are allergic to or possibly an allergy to wool or a particular plant. Although these are some of the most common allergies, they are far from the only ones which cause us grief.

A better term for &quote;allergies&quote; is &quote;hypersensitivities&quote;. The concept of allergies is more than 80 years old and only includes the original ideas of IGE, IGM and IGA serum sensitivities. These can be successfully identified by skin testing.

Mankind has always processed his food; food processing is an activity that is uniquely human. One type of food processing is cooking.

Traditional food processing had two functions: to make food more digestible and to preserve food during times of scarcity. This type of processing resulted in traditional foods like sausage and the old-fashioned meat puddings and haggis. It includes sourdough bread, fermented grain products, cheese and other fermented milk products, pickles, sauerkraut, and beverages--everything from wine and spirits to lacto-fermented soft drinks.
